Thought I would share a quick and easy vegan recipe with you (and it doesn't even involve TOFU!!!!)

Blueberry-Banana Muffins With Crumb Topping

Makes 10-12 muffins (yeah right - that's what they always say, expect fewer)

    3 ripe bananas
    1/4 cup vegetable oil
    1 cup sugar
    1 tsp. salt
    1 tsp. baking soda
    2 1/2 cups flour, divided
    3/4 cup fresh or unthawed frozen blueberries
    1/2 cup brown sugar
    4 Tbsp. nondairy margarine (although if you HAD to I suppose you could use butter - which would make this a lacto-veg recipe instead, and add some cholesterol to boot)

Preheat the oven to 350°F.
In a medium bowl, mash the bananas with the oil and sugar and mix well.
In a small bowl, sift together the salt, baking soda, and 2 cups of the flour.
Add the dry mixture to the banana mixture and stir by hand until the two are thoroughly combined. Fold in the blueberries.
Pour the batter into a lined muffin pan.
In a small bowl, combine the remaining 1/2 cup of flour, the brown sugar, and the nondairy margarine. Stir until the mixture forms coarse crumbs then sprinkle the crumbs onto the muffins.
Bake the muffins for 25 minutes or until a toothpick inserted in the middle comes out clean.

These go GREAT with some soymilk!  (hehe I added that part - had to throw it out there)

Just to show you all that even some guys can cook, I'm going to throw one of my special recipes out there and let you try it for yourself!

For all you mac & cheese lovers (and Jureal & Puga know, cause they've had it before!) this is a nice variation of the plate which can go great as a side dish to a meat (or other veg. Gnelza!), so enjoy!

Macaroni Casserole

 

 

 

  • ½ cup chopped onion (small onion)
  • Tablespoon of butter/ margarine (enough to sauté onion in small skillet)
  • Can of Campbell’s Cream of mushroom soup
  • ½ cup of milk
  • 3 cups of cooked elbow macaroni (1 large package, 16oz.)
  • 1 ½ cup shredded cheddar or Velveeta (1/2 block or more, poss. Mixture of shredded cheddar on top)

 

Cook onion in butter in small skillet until tender

Blend in soup, milk and onion with cooked macaroni.

Mix in Velveeta.

Place in buttered bake dish and top with cheddar cheese (I like shredded sharp cheddar).

Bake 25-30 minutes @ about 350 degrees (until cheese is brown on top)

Hmmm...don't know if I can trust your culinary suggestions after that whole toffuti debacle.

But it does look tempting...Aren't blueberries still in season?

HEY!  I specifically UNsuggested plain vanilla!  hehe  Even I don't like that!
